Summit Event Catering's philosophy about our business is based on THE RELATIONSHIP. For us it's all about the relationship we share with our clients and our colleagues. We continue to build relationships with our industry colleagues through being members of associations that help us to learn how to meet our goals of excellence. It's always an honor when one of these associations asks us to sponsor the meal at a meeting or educational event. One such sponsorship was the recent "Meeting Professionals International - OC Chapter" event. Our Event Producer Christie Kelsoe, met the challenge by creating a menu that would impress the event industry attendees.Dax Gallery was the location for the meeting. The are located in Costa Mesa, and are an influential part of the growth of the Orange County Art's Scene. Their gallery features Urban Fine Artists, in ever changing exhibits that inspire their patrons. This minimalist gallery is the perfect location for a contemporary event. Dax Gallery boasts 4200 square feet of space, 20' ceilings, over sized widows and doors.Christine created International food stations that featured the varied styles of cuisine our chefs master. As with every event we sponsor, the amount of food was in abundance. Christine's menu included:Tray Passed Hors D'Ouvres:

  • Oven Roasted Quesadilla Rolls with Chicken Breast, Cilantro & Cheddar Cheese, served with Avocado Tomatillo Dip
  • Coconut Beer Battered Shrimp, with, Tangerine Mustard Dipping Sauce
  • Braised Short Rib Bites, with Yukon Gold Mashed Potatoes & Drizzled with Green Peppercorn Demi-Glace
  • Roasted Tomato Soup Shooter, with Sage & Fontina Grilled Cheese Sandwich

Greek Food Station:

  • Warm Pita Bread & Tzatziki Sauce
  • Hot Spinach & Artichoke Cream Dip with Focaccia Fingers
  • Mediterranean Couscous Salad
  • Beef Kabobs
  • Cucumber Mint Refresher

Italian Food Station:

  • Ceasar Salad, with Fresh Focaccia Croutons, Shaved Parmesan Cheese & Caesar Dressing
  • Chef's Famous Four Cheese Macaroni, with Parmesan Bread Crumbs
  • Margarita Focaccia Pizza, with Fresh Tomatoes, Mozzarella & Basil

Mexican Food Station:

  • Tortilla Chips, with Salsa Verde & Salsa Quemada
  • Mexican Chicken Lasagna, with Roasted Poblano Peppers, Cotija & Pepper
  • Vegetable Cheese Enchiladas, with Chipotle Cream
  • Banana Horchata

Asian Food Station

  • Crispy Wild Mushroom Spring Rolls, with Chinese Mustard & Sesame Dipping Sauce
  • Chinese Chicken Salad, with Orange Segments, Carrots, Green Onions, Wonton Strips & Peanut Vinaigratte
