SUCCESS AMID COVID-19

CORPORATE EVENT SUCCESS AMID CORONAVIRUS

At Summit, we pride ourselves on building confidence in our clients. Although the COVID-19 outbreak has created mass amounts of concern, we have adapted our catering style to provide exceptional service in the most sanitary way. Below, we’ll walk you thorough our recent corporate event and show you the measures we took to ensure the happiness and health safety of the hundreds we served.

As recipients of OC Health Care Agency’s 2020 Sanitation Award of Excellence, we take our care seriously. Two of our onsite managers, Joe Lopez and Marco Ramirez, work together in preparing the hotboxes.

In response to mandates by local county and state officials, many smaller businesses have halted operations to help prevent the spread of coronavirus. However, companies who provide “essential services” remain open. We’ll give you two examples: Summit, and this particular eco-friendly company who hired us to serve their team this past week.

That being said, it was extremely important that we communicated effectively in anticipation of our service to discuss expectations to protect all employees and ensure all health safety concerns were addressed.

Summit decided that in order to provide the highest quality of service, we had to try something new. We planned to adapt our traditional service styles (for example, plated meals and buffet stations), to a new, “touch free” approach. Furthermore, we wanted to match the eco-friendly values of the company we were serving as well.

THE SOLUTION

"One of our hotbox meal options:” Grandma’s Meatloaf, Garlic Butter Mashed Potatoes, Scratch Brown Gravy, Chef’s Creamed Corn, and a Cornbread Muffin with Butter

We provided a combination of hot and cold ready-to-go options, both prepared in house and on-site in order to keep cuisine fresh. Instead of using chaffers, individual portions were placed into singular, biodegradable containers. Bread rolls, salads, and desserts were served in individual packages and placed into an additional tray container. Meaning, each meal was carefully and specially packaged to prevent any direct person-to-person contact.

THE SERVICES

Our server, Esticel, gently places our house salad (fresh greens with shaved carrots, tomatoes, cucumbers, and more) as accompaniments to the hot meal. Each item is individually packaged and handled with great care on site.

Sometimes, less is more. We limited the number of servers on site to two, where both wore gloves at all times. We routinely cleaned surfaces with disposable wipes, used “no-touch” trashcans, and had extra hand sanitizers and sanitation buckets. While our service was not as “hands on,” our attention to detail remained the same.

THE RESPONSE

The team was blown away in Summit’s execution. As described in their yelp review:

“10 GOLD STARS!THANK YOU for always going above and beyond and truly making all of our events and luncheons a delicious experience! Summit exceeds expectations with a friendly, polished and caring staff that knows hospitality. With little notice they came through for us and provided hot delicious lunches for 350+ team members all week long.”

“Everyone kept asking what they are having for the rest of the week,” added Summit’s Event Producer, Pam Aki.

OVERALL
