In today’s Summit Story, we’ll take you to an intimate beachside wedding that was customized with an entirely vegan menu. 

A Slice of Life

While the bride and groom are devoted vegans, their family members are not. However, it was important to the couple to share “who they are” on their wedding day. That being said, customization was key when preparing their menu.

“The bride and groom really allowed us the freedom to create their menu, so we wanted to make sure that they not only loved everything, but were able to impress their non-vegan guests,” said Summit’s Event Producer, Pam Aki.

Wedding Day

The couple had a small and intimate wedding on the patio of a Laguna Beach boutique hotel. They had seventeen guests attend, where the reception followed soon afterward. The Social Hour not only gave a first impression of the evening, but a glimpse into the lifestyle and values that the bride and groom hold.

A variety of healthy, vegan appetizers were served, including Avocado Bruschetta, Maple Mustard Brussel Sprout Skewers, Spinach & Artichoke Cups, and Cauliflower Buffalo Wings with Vegan Ranch.

A Four Course Vegan Meal

With a lesser guest count, it allowed us to create a fully personalized experience. A Curried Butternut Squash Soup was served for the first course, with a Red and Golden Beet Salad following – delicious, yet light enough to leave room for more!

A refreshing raspberry sorbet was served after the salad as a palate cleanser, to get the guests ready for the entrée. 

 
 

The main course included a Spaghetti Squash Puttanesca with a Meatless “Steak” served with a Stuffed Portobello Mushroom, Roasted Fingerling Potatoes, and Asparagus in a Ring of Yellow Squash.

The upscale vegan entrée wowed the guests so much, that it was difficult for them to comprehend no meat was involved!

Summit’sExecutive Chef Andrew was on-site and explained the intricacies of the dish to the guests as well as the preparation that went into it, adding a special touch.
